On Utila, Monday is always "killin' day." (So is Friday.) The sign down at the corner reads, "Notice: There will be a nice young beef, Utilla born, in the market Monday morning. Come and buy. -J.J." They slaughter in the bush and butcher the animals in a shed next to the municipality. You come buy it that morning. Talk about fresh! Monday is Killin' Day

A team of 14 visited Utila from First United Methodist Church of Brownsville, Texas. My favorite aspect of their work was the excellent special services provided at four churches on Utila and the keys.
